GRAND RAPIDS, Mich (WOTV) – When it comes to food, this is a really indulgent time of year. It’s important to think about keeping the healthy stuff, like veggies, in our diet. Warm, flavorful, and chock-full of veggies, Green Soup is a great way to add a boost of vitamins to your diet. In the video above, Michele explains the benefits of adding this tasty soup to your diet.

- 2 tablespoons extra-virgin olive oil, plus more for garnish
- 1 large yellow onion, chopped
- 1 clove garlic
- sea salt
- 1/4 cup arborio rice, sushi rice or 1 white potato.
- 1 bunch greens (about 1 pound chard, kale, spinach, etc) remove any tough stems
- 4 cups vegetable broth, store-bought or homemade
- Big pinch of cayenne pepper
- 1 tablespoon lemon juice, or more to taste
-Add your olive oil to a heated stock pot. Then add your onion, garlic, potato if using (if using rice add later). Sprinkle with sea salt and cover to cook 5- 10 minutes. Stir occasionally to prevent sticking.
-Next you can add the veggie broth and this is where I might add my rinsed rice if not using the potato for creaminess. Cover and simmer 10-15 minutes.
-Now add your rinsed greens and cook 7-10 minutes longer until greens are a bright green color- looking yummy.
-Let this cool a bit and then you can either use an immersion blender or conventional blender to puree this down. If it seems to thick you can add more broth or water, add salt and pepper to taste along with a generous pinch of cayenne pepper and a squeeze of fresh lemon juice.
This is a very basic recipe. You can use almost any greens you desire, spinach, chard, parsley, kale. I have often made this and used a blend of any 3. Experiment with the onion, garlic and pepper quantities, sometimes I add back in some cooked rice after blending or small diced zucchini or other veggies for texture or interest.
