Surprising fruit salad combos that pop

GRAND RAPIDS, Mich (WOTV) – You may think of fruit salad as ho-hum, but brighten it up this summer with a few surprising combos. Give your taste buds a kick with these exciting recipes:

Strawberries and balsamic

Sounds pretty weird, right? This is one of my favorite fruit salads. It’s sweet, tangy, and absolutely delicious! Slice up the strawberries and toss with balsamic vinegar and a little crushed black pepper. Let it sit for one to two hours to get all the juice moving. Ina Garten has an easy to follow strawberry and balsamic recipe that she puts over vanilla ice cream. For my own twist, I like to crumble in some fresh goat cheese. It takes the fruit flavors to a deeper place, a much more ‘grown up’ fruit salad.

Watermelon and mint

This combo is super fresh and bright for the summer time. It’s cool and refreshing, while dressing up regular watermelon slices. Cube up your melon, sprinkle it with thin strips of mint and fresh lime zest. This recipe from Food & Wine kicks up the flavor with a pinch of cayenne pepper. Take this salad to kid friendly heights by blending the watermelon, mint, and lime. Pour the mixture into popsicle molds and freeze. Viola, you have a delicious summer treat that’s light and easy to eat.

Apple and jalapeno

This combination is going to perk up your taste buds! Crisp, tart apple meets spicy jalapeno for a flavor explosion. Slice the apple into thin strips and the jalapeno into very thin slices. Toss together to make a sort of ‘slaw’ that’s great to cool down BBQ or tacos. I like mine with a drizzle of a honey vinaigrette. If you are wary about the spice, this recipe has a cooked down version with added spices that you’re sure to love.
