Mum’s the word for Mother’s Day, coconut banana cream pie

A Mother’s Day brunch or just afternoon tea, this is a dessert that your mom is sure to remember. It goes together quickly. The ingredients are pretty simple. And, the taste is out of this world. Shhhh, this is one of my most requested recipes, which I have kept secret until now. I’ve been asked about for years and have finally decided to post it because of course, moms are worthy of the best! Pinky swear to keep it to yourself and spoil your mom by making it for her this Mother’s Day. She deserves it.

Coconut Banana Cream Pie

(v/gf/r)
Makes one amazing 9” pie

Crust:

1 t Coconut oil
1 C Almonds, raw
1 C Walnuts or Pecans, raw
1 t Vanilla extract or 1 vanilla bean, scraped for seeds

1/2 C Honey, raw
1 t Cinnamon

Preparation:

• Using a pastry brush, coat the bottom and sides of 9” glass pie dish or a spring-form pan with coconut oil and set aside.

•Place remaining ingredients in food processor fitted with the chopping blade.

•Pulse until the mixture resembles small crumbles, do not let mixture form into a ball.

•Press firmly into bottom and sides of pie dish, using water to keep fingers moist while pressing. This decreases the stickiness factor!

•Place in freezer while making the filling.

Filling:

3 C Coconut meat from approximately 3 young thai coconuts
1/2 C Honey, raw or maple syrup
1/4 C Coconut oil
1 t Vanilla extract or 1 vanilla bean, scraped for seeds

1/4 t Sea salt
1/8 C Sprouts, alfalfa or clover

6-8 Bananas, firm
Ground cinnamon, nutmeg and clove for garnish

Preparation: 

•Place coconut meat, honey, coconut oil, vanilla, sea salt and sprouts in a blender and blend until smooth and creamy.

•Mixture should measure approximately 3 cups in your blender pitcher, if not add more coconut meat.

•Line a prepared 9” pie plate with firm bananas.

•Pour cream filling over bananas.

•Place in freezer until firm.

•Remove pie from freezer 30 minutes prior to cutting and serving.

•Garnish with spices before cutting.

•Cut into 8 or 16 equal pieces.

•Enjoy!
