Fun recipes to use up Easter eggs

GRAND RAPIDS, Mich. (WOTV) You color them and hunt for them in the yard, but then what? Bring the kids into the kitchen and let them help you create something to use up your leftover Easter eggs! These great recipes come to us courtesy of Women Living Well.

Deviled Eggs 

Ingredients:

  • 10 Easter eggs
  • ½ cup mayonnaise
  • 1 ½ tsp. prepared mustard
  • ½ tsp. salt
  • 2 dashes pepper
  • Paprika to taste 

Instructions:

Peel the eggs and slice them in half. Scoop the yolk out and put them in a separate bowl. Set aside the whites. Mix yolks with mayonnaise, mustard, salt, and pepper. Carefully spoon the yolk mixture into each egg white half. Sprinkle with paprika.

 

Eggcellent Egg Salad

Ingredients:

  • 12 Easter eggs
  • 1 ½ cups mayonnaise
  • 1 ½ tsp. Dijon mustard
  • ½ tsp. salt
  • Celery and onions if desired 

Instructions:

Peel the eggs and chop them into bite sized pieces, or smash them with the back of a fork. Add mayonnaise, Dijon mustard, and salt to taste. Mix well. Include finely diced celery and onions if desired. Serve on bread, croissants, in a wrap, on top of lettuce, as tea sandwiches, in a phyllo cup, or however your family enjoys it!

 

Easter Egg Toast

Ingredients:

  • 10 Easter Eggs
  • White gravy mix
  • Bread for toast (1-2 slices per person) 

Instructions:

Prepare gravy mix according to directions, set aside. Peel the eggs and chop them up or smash them with the back of a fork. Add eggs to gravy mix, stir. Pour mixture over toast and enjoy!
