The polar vortex and I are getting along fine as long as I am baking goodies in the kitchen. Today was a great day for my super delish vegan choc chip cookies. While I really have no issue from eating eggs from some happy and willing chickens a friend keeps as pets, I do not like or want to consume the store bought variety derived from the factory farming industry. This type of egg production is not good for the chickens and cannot be good for us either! So here is my version of the best choc chip cookie ever!
(note- this makes a 1/2 batch, great for a small family)
Preheat oven 375.
1 stick earth balance vegan butter (1/2 cup) softened at room temp.
3/8 cup organic brown sugar
3/8 cup raw cane sugar
1 tbsp ground flax-mix with 2 tbsp water
1 tsp natural vanilla
Blend the earth balance with the sugars, add the vanilla and your flax mixture.
1 1/8 cup unbleached all purpose mutli grain flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped nuts (walnuts or pecans)
Mix the dry and add to the wet ingredients. Now add 3/4 cup natural cacao or dairy free choc chips. Ghiradelli makes a vegan option in a gold bag.
Bake at 375 for 8-10 minutes and enjoy
